The pastry
It starts with kouign-amann, the caramelized, flaky Breton pastry, somewhere between a croissant and a brioche.
Kyle bakes them in small batches under his YAS! Kouign name. Eaten warm, the pastry is the dessert. Split and filled with ice cream, it becomes the sandwich he is known for.
